Because they think that in real life, there really are separate races. It is inconvenient for them to know that evidence points out that all humans originated from Africa. They also throw out genetics.
I would like to point out that there is no real advantage in being black or white. Dark-skinned people are less likely to get cancer, but are more likely to get rickets, a disease caused by the lack of vitamen D, which the sun helps make; their dark skin doesn't allow for a lot of vitamen D to be manufactured in the skin. Light-skinned people, on the other hand, are less likely to get rickets, since their skin can absorb more of the sun's rays, but they are more likely to get cancer because of this. It's a trade-off. Neither is superior to the other.
How did this evolution come about? Humans moved north and south. They farther they were from the equator, the lighter they became because being black wasn't beneficial. Lighter babies survived more, enabling them to reach reproduction age. The humans who stayed near the equator are darker because it was more beneficial to be darker in color. The lighter babies died more often.
See, there is no such thing as races in the real world. People only use them to label each other.
