I think it is b/c nabooru turned him down for a date and he didnt want to admit but since he didnt tell anyone it was all bottled up and the pressure was to much.

It's stated in TWW that Ganondorf was envious of the wind that blew across the Hyrulean plains.  The wind in the desert brougt death.  There is also a theory out there that says that Ganondorf was possessed by Ganon.  From there, it can be that Ganondorf let Ganon take over him or that Ganondorf was unwilling possessed by Ganon.  It's all up to interpretation.
