It's not his original shield though.  The Hylian Shield has the phoenix under the Triforce, and the Hero Shield has the phoenix above the Triforce.  So what happened to the Hylian Shield, or the Deku Shield, for that matter?

I think at least a year happens between OoT and MM, so Link grew up some, explaining how he can hold up the Hero Shield.  Remember, it's no longer the Hylian Shield; different designs and the Hero Shield can be found in Termina, who never heard of Hylians.  And I know what you're going to ask, and I think that they called themselves Terminians.  Or Terminese, if you like that better.

Doesn't explain how young Link learnt to use a bow so quickly. ( Unless after going back seven years he retained his knowlege and skills with weapons he gained as an adult...)

Reasonable. Still, I think Link's slight growing up helped him learn how to use new weapons.

How does he learn to use a bow as an adult?

When you get a weapon, Link automatically adapt to it without training. It's up to the player to be good.
