I think he gave his horse to Ganon to replace Epona so Ganon wouldn't throdle him.But,Ganon probably wasn't pleased with a horse that cannot jump.So,he probably gave it to the Gerudo(because he's their king)and they use it for horseback archery.I wonder why you can't ride it?P.S. Ganons horse is a solid black Gerudo stallion. ;D

Anyways, Ingo's horse (or rather Lon Lon Ranch's horse) is at Gerudo Fortress because I commanded it so.  They needed a horse for their horseback archery range.

They do.  They just don't show it in the game.  It's like where do all of those people in the Market live?  They can't all possibly live in the back alley.  And Hyrule is a kingdom, but we only see less than a townful of the population.  It's there; we just can't see it.
